Moosewood Perfect Chocolate Cake

Ingredients
1 c cocoa (unsweetened)2 c boiling water2 3/4 c all purpose flour2 t baking soda1/2 t salt1/2 t baking powder1 c butter2 1/2 c sugar4 eggs1 1/2 t vanilla extract
Directions
yields a 3 layer 9 inch cake (serving size 1/8 of cake)

preheat oven to 350*
butter and flour three 9" round cake pans (line bottoms with parchment or waxed paper)

combine cocoa and boiling water
stir until smooth and cool completely
sift together dry ingredients
in a large bowl beat together butter, sugar, eggs, and vanilla
alternate adding the dry ingredients and the cocoa mixture to the other wet ingredients. do not over mix

divide the batter evenly into cake pans
bake 25-30 minutes

cool in pans for 10 minutes then remove from pans
cool completely before frosting
