Chicken and Broccoli Casserole

Ingredients
1 pound boneless, skinless chicken breasts1 (10-ounce) package frozen broccoli spears1 can lower-sodium cream of mushroom soup3 tablespoons fat-free mayo1 cup reduced-fat shredded cheddar cheese
Directions
Boil the chicken breast until done and drain. When cool enough to handle, cut into 1-inch pieces. In a square or round casserole dish, mix mayo and soup. Add broccoli and chicken and mix well. Sprinkle with cheese. Bake at 350 for 20 minutes or until cheese is melted. Serves 4.

    Great, easy, tasty recipe! I don't eat carbs for the evening meal and have a hard time finding meals that are easy, tasty, and filling--this totally fits the bill! I used lowfat cream of chicken and fresh steamed broccoli, and added onion and parsley to the water when boiling the chicken. New fave! - 2/12/08

    Boiling Chicken will never cease to confuse me. lol.
    Now, BROIL or bake the chicken and you are adding some grilled flavor, boil it and you are just making rubber cubes. That being said, this recipe (minus boiling the chicken) was super easy and yummy and just what I needed on a cold snowy day. :) - 2/3/11

    YUM! I had to make a couple of modifications based upon what we had in the house: used 98%FF Cream of Broccoli and 1/2 shredded mexican blend cheese and 1/2 shredded mozzarella cheese. Served it over brown rice. DELICIOUS and SIMPLE! We will be having this again, no doubt. Thanks! - 3/5/08

    This was very tasty and simple to make. We made a minor substitution - 98% fat free cream of chicken soup instead of mushroom soup. Next time will stir the cheese into the mixture, as it clumped on top. Will definitely have this again! - 3/5/08

    This was a quick, easy and filling idea for dinner. I used precooked chicken and substituted fat-free sour cream for the mayo (it was what I had on hand.) It was a tad bland for me, so I may add some spices next time, but it's a great time-saver to add to my weekly rotation. Thanks for the idea. - 11/14/08

    I make this on a larger scale with both broccoli and cauliflower, and one can each cream of mushroom and cream of chicken soup. Sometimes I leave the chicken out and grill it on the side. Yummy! - 3/20/07

    So good! I used precooked diced chicken because I was short on time, and cream of chicken soup instead of cream of broccoli (my husband was afraid it would be way too broccoli-y for his taste) and it was a hit all around. My daughter even liked it, and she's SO picky! - 3/11/08

    Liked Jessicca2872's idea. I used a bag of California Medley mix (includes carrots), I had it on hand and half a can of each soup, calories stay about the same as original recipe. Delicious! - 3/22/07

    I had to cook mine a little longer than 20 min. but it was really good. I think next time I am going to add more cheese and some mushrooms. I also used Kraft Mexican Cheese instead of Cheddar. - 9/23/08
