Goat Cheese Salad

4-6 cups baby mixed green salad mixItalian Bread Crumbs4 One ounce slices of Goat cheese (from a log)3 tbsp Olive oil1 cup red seedless grapes1 Cup Walnuts (or other nut) chopped
Makes 4 servings
Preheat oven to 400 degrees. Line a cookie sheet with foil and set aside.
Put Olive oil in bowl, in a separate bowl put bread crumbs. (I just make sure there is enough in each bowl to coat the goat cheese)

Cut 4 1 ounce slices of goat cheese from the log.
* hint the colder the cheese the easier to slice.
Coat the Goat cheese "wheel" first in olive oil and second in bread crumbs and place on a foil lined cookie sheet about 2 inches apart.
Bake at 400 degrees for about 6 minutes until the cheese gets warm and starts to expand.
Toss Salad mix, grapes, walnuts and black pepper together and place in individual salad bowls. Top with Salad dressing. Carefully add goat cheese to center of each salad.
Enjoy this wonderful salad.
I also mix it up with different nuts, add tomatoes, red onions or whatever I'm in the mood for.
