Country French Chicken Stew

Ingredients
4c sliced mushrooms1 14.5 oz can diced tomatoes, undrained2 med. carrots, sliced thin diagnally1 med. onion chopped1 med. red potato, cubed1/2c fresh green beans, chopped1c low sodium chicken broth1TBS herbes de Provence3/4 tsp dried thymeCourse pepper to taste8 skinless, boneless chicken thighs1/2 tsp seasoned salt 2c Trader Joe Garlic Marinara, added seperately
Directions
In a 5-6 quart crockpot combine all ingredients in the order listed, except TJ Marinara. Chicken thighs end up on top, sprinkle with seasoned salt. Cover, cook on low setting for 6-7 hours or on high for 3-4 hours. Stir in Marinara sauce. Serve over rigatoni or bow tie pasta(optional)

    Family liked it. I added two ribs of diced celery,cup of white wine and tsp of minced garlic. I shouldn't have tenderized the chicken. - 11/10/10
