Banana Oat Muffins

Ingredients
3 ripe bananas, mashed1 c brown sugar1 egg (or 3.5 tbsp egg white substitute)1 tsp vanilla1/3 c applesauce (or 1/2 c oil)2 c whole wheat flour1 c rolled oats1/2 tsp cinnamon1/2 tsp ginger1 tbsp baking powder1/2 tsp baking soda
Directions
Preheat oven to 350. Line muffin pans or coat with cooking spray.
In a large bowl, stir together the bananas, brown sugar, egg, vanilla and applesauce. In a separate bowl, combine the whole wheat flour, oats, cinnamon, ginger, baking powder & soda; stir into the banana mixture until blended. Spoon the batter into the prepared muffin pans.
Bake for approx 25 mins, until the tops spring back when lightly pressed.
