Truffle Vinaigrette

Ingredients
Dijon Mustard, 1 tspShallots, Minced, 1 TbspChampagne or White Wine Vinegar, 2 TbspBlended or Light Olive Oil, 4 TbspWhite Truffe Oil, 1-2 Tbsp (recipe allows 2)salt & fresh ground black pepper to taste
Directions
-Whisk mustard, vinegar and shallots in a medium sized bowl to form a loose paste.
-While whisking constantly (put damp towel underneath bowl to keep steady if needed) drizzle in the blended oil slowly. A good emulsion should form.
-While still whisking, slowly drizzle in truffle oil, stop to taste occasionally for flavor - stop when truffle flavor is strong enough.
-whisk in salt & pepper to taste.

-Can be stored at room temperature.
-Toss very lightly with Arugula, chopped hard boiled egg and cooked pancetta, or in your favorite salad
