Ingredients
4 flour tortillas2 cups mixed low fat and regular cheddar cheese1 medium onion1 medium green pepperOlive oil for pan
Directions
slice or dice the onion and green peper. Saute in frying pain, take out and set aside in bowl. In the same pan place one tortilla, spread about 1/4cup of cheese on one half of the tortilla (so it can be folded in a minute. Place some of the sauted onion/pepper mixture on the cheese. Add another 1/4 cup of cheese ontop of the vegetables. Fold the tortilla in half (so the cheese mixture is sandwitched inbetween the two sides. Flip (so both sides become brown). Repte these steps for the 2-4th tortillas.

    I think it's great as a side, but I wanted something a little heavier as a meal, maybe with some chicken added (although that ruins the veggie thing). - 3/21/07
