Herb-Roasted Winter Veggies - Low fat version

Ingredients
2 cups bite-sized cauliflower florets, halved2 cups halved Brussels sprouts2 medium carrots, cut into sticks1 medium yam or sweet potato (1/2 lb.), dicedOlive oil spray1 Tbsp. chopped fresh rosemary2 Tbsp. chopped fresh parsley2 tsp. lemon juiceOptional -- 2 tsp. fresh thyme (not in nutritional info)
Directions
Preheat oven to 450. Mix ingredients minus lemon juice in a bowl, season with salt and pepper if desired. Spray liberally with olive oil spray. Scatter vegetables evenly on baking sheet, roast 20 minutes, turning 2 or 3 times w/ spatula. Increase oven temperature to 500 degrees and roast 10 minutes more until tender. Remove, add a little oil if wanted, and add lemon juice.
