Buttercup Squash Soup

Ingredients
1 lg Butternut Squashhalf an onion2 cl garlic1c buttermilk1/2c apple juice1c water (or broth)1/2 chipotle pepper1T maple syrup2T olive oilsalt/pepper to taste
Directions
Halve the squash, remove seeds, place in a pan with 1/2inch of water and bake in the over for 30-40mins. Scoop out the flesh. Cook the oil, onions and garlic, until translucent. Add all other ingredients including cooked squash. Puree the soup, adding more liquid to reach desired consistency. Makes about 6 cups. Nutrition is calculated according to a 1 cup serving.
