Slow Cooker Ham & Beans

1lb - dry great northern beans1lb - 97% Fat Free Ham Steak, cubed8 cups water2 T dry italian seasoning (oregano, basil, etc)1 tsp cayenne pepper1T honey1 large bay leave1/4 tsp baking soda*salt & pepper to taste
Makes 8 HEARTY one cup servings
Prepare and soak dry beans according to package. Drain.
Mix all ingredients in a slow cooker (crock pot) and cook on high for 2 hours.
After 2 hours turn slow cooker to low and cook another 6 hours. OR I sometimes just set it on low, but cook it for about 10 hours. It just depends on what kind of time you have.
This recipe could easily be adapted to stove top as well. It is very versatile.
*Note: The reason for the baking soda is to prevent you from the not so nice part of beans. How does that saying go? Beans beans the magical fruit....the more you eat the more you......well......you get what I'm saying, right? Try this little tip with all your bean recipes and you can thank me later. :-) Just don't go over 1/4 tsp for a big pot of beans. Without enough seasoning the baking soda can bring on a soap-like flavor. Not good.
