Sandy's Red Beans & Rice

Ingredients
1 lb. red beans, washed and drained1 clove garlic, minced3 c. red wine1 c. water1 TB Worcestershire sauce2 tsp. Louisiana hot sauce2 slices bacon, dicedcelery, chopped6 cups cooked brown rice
Directions
** Veggie was the closest, but as written this dish contains bacon. The bacon is easily omitted for a vegetarian meal.***

Marinate beans in wine, water, garlic, Worcestershire sauce and hot sauce overnight. Next day, cook bacon until crisp. Drain bacon grease. Add the celery and the bean mixture to a crock pot w/ the bacon. Cook on high for 6 hours in the crock pot. If beans begin to appear dry, add more water.

When beans are done to desired tenderness add salt (not before!) and serve over the cooked rice.

Makes 8 generous servings (about 1-1.5 cups each-- but I divide the whole recipe into 8 after making it.)
