Citrus Fish Fillets

1 orange1 lemon1 onion, cut into 1/4 inch pieces5 tbsp fresh chopped parsley2 lbs cod, skinned and deboned4 tsp olive oil
1. Before peeling, run the orange and lemon over the smallest teeth on a vegetable grater to yield 2 tsp of grated rind from each. Peel the remaining rind from the orange and lemon, discard and slice the fruit into ¼ inch thick pieces. Wash the parsley under cold water and chop into ¼ inch pieces.
2. Rub the butter on the bottom of the slow cooker. Add the fish fillets. Put the onion, parsley and grated rinds on top of fish. Drizzle with olive oil. Cover and cook on low for 1 ½ hours. Ten minutes before serving add the orange and lemon slices on top.
