Super Tasty Ham & Vegetable Broth

750g smoked gammon joint 1 tbsp olive oil1 onion - finely chopped3 carrots - sliced (bigger slices in half moons)2 medium potatoes - cubed250g broth mix1 ham stock cubeSalt & pepper
Serves 8-10
1. Place the gammon in a pan and cover with boiling water. Bring back to the boil and turn the heat down to boil gently for 55 minutes.
2. Remove the gammon from the pan, keeping the water to the side, and allow to cool down and rest for 10-15 minutes.
3. Meanwhile heat the olive oil in a pan before adding the onions and frying over a medium heat for a few minutes until the onions have softened.
4. Add the carrots and potatoes and fry for a further 3 minutes. Meanwhile carve the gammon into bite pieces. I usually cut into thick slices and tear apart for a more rustic feel!
5. Stir in the gammon and the broth mix and add the water used for boiling the ham.
6. Add a bit more boiling water to ensure everything is covered with about 1" of water.
7. Crumble in a ham stock cube and add salt and pepper.
8. Bring to the boil and then turn down to simmer for 1.5-2hrs, covering the pan. Check the pan at regular intervals and top up with water if required.
* This soup will naturally absorb more water over time so if left for a while it will need more water added before reheating. *
