Scallops, Spinach, Mushroom & Orzo

Ingredients
Makes 4 servings:1 lb. sea scallops1 c. orzo2 tbs. olive oil2 garlic cloves1 c. spinach1 c. mushrooms2 tsp. pepper
Directions
Cook orzo to direction on package.

Heat 1.5 tbs olive oil. Add garlic and mushroms. cook for about one minute. Add Spinach, cook for one more minute. Add orzo. Keep warm.

Heat other .5 olive oil. Cook scallops until opaque. Depending on the size of the scallop, 3 or 4 minutes per side. Sprinkle with pepper.

Plate orzo mixture, place scallops on top.
