Reduced Fat Pumpkin Pie

4 egg whites2 cups pumpkin puree 14 oz can of fat-free sweetened condensed milk (not evaporated)1 tsp vanilla extract2 tbsp powdered sugar1 1/2 tsp cinnamon1/2 tsp salt1/4 tsp ground nutmeg1/4 tsp ground ginger2 8 inch Reduced fat pie crusts
Preheat oven to 425 degrees.
In a large bowl, lightly beat egg whites. Add pumpkin and milk and mix well. Add remaining ingredients and mix until well combined. Pour 1/2 of mixture into 1 pie shell and pour the other 1/2 into another pie shell. Bake for 15 minutes. Reduce temperature to 350 degrees and bake for another 20 minutes or until knife comes out clean.
Makes 16 slices.
Serve with fat-free whipped topping if desired. (not in calorie count)
