Fast 3 bean vegetarian chili

Ingredients
1 tbsp olive oil1 clove garlic, crushed1 onion, chopped1 green bell pepper, chopped4 celery stalks, diced1 can black beans, drained1 can pinto beans, drained2 cans kidney beans, drained1 large (28 oz) can diced tomatoes, with liquid1 can tomato sauce1 can corn, drained0.5 - 1 tbsp beef or chicken boullion powder, or to taste1 tbsp ground cumin, or to taste1 tbsp red chili powder, or to taste1 tsp crushed oregano, or to taste
Directions
1. Saute the onion in olive oil until tender
2. Add bell pepper and celery
3. Saute about 5 minutes (while you open the cans)
4. Add all other ingredients, adding spices a little at a time and tasting after mixing.
5. Heat through.

Makes about 8 2-cup servings.

Can also be made with diced tofu or extra lean ground turkey added to the onion when sauteeing.
