Cool Black Bean Burritos

Filling:1 cup black beans1 cup sweet corn1/2 cup bell pepper1/2 cup red onion1 tbsp cilantroDressing:1/2 cup fat free sour cream1/2 avocado1 tbsp lemon juice1 tsp garlic powder1/2 tsp salt1/2 tsp black pepper4 flour tortillas (fat free)1/4 cup shredded cheddar cheese (fat free)4 large leaves of iceburg lettuce
Drain and rinse black beans, then put in a large bowl. Add corn. Chop pepper, onion, and cilantro, then add them as well.
In a food processer, combine avacado, lemon juice, sour cream, salt, pepper, and garlic powder. Blend until smooth.
Pour the dressing over the vegetables and beans, and toss to coat.
Place one leaf of lettuce on each tortilla. Fill with 1/4 of vegetable mixture. Sprinkle with cheese. Fold burrito. Use a bit of water on edges to help it stick together.
Spray pan with Pam or other non-stick no calorie cooking spray. Heat both sides of burrito about 30 seconds each to warm and brown the tortilla.
Serves four.
