Fantastic low carb pancakes~

Ingredients

1/2 cup almonds (puree in food processor)1 large egg 1/4 c egg whites 1tsp baking powder 1/4 cup heavy cream 1/4 t of pure vanilla extract
I ground up a 1/2 cup of almonds in a food processor.
Once that was completed I added remaining ingredients and mixed together while warming up my non-stick skillet. DO NOT MAKE THE SAME MISTAKE I MADE by not spraying the non-stick with cooking spray...it needs the spray.
I used a small ladle and made 8 decent sized pancakes (grapefruit size) and a pancake the size of a tennis ball. (It's supposed to make eight pancakes).
I topped with sugar free syrup for a breakfast I loved as a child. It was scrumptious.
