Ingredients
*Tofu, extra firm (1 block)*Low-cal tortillas (6)*olive oil (4 tbs)*garlic (1 clove)*frozen peppers & onions ( 1 cup)*Vegan sausage crumbles (1.5 cup), or Vegan cheese shreds (1 cup)
Directions
Scramble tofu, add other ingredients and fold into tortillas. Freeze in tin foil.

    This is a good, basic recipe, but I'd spice it up. Add some peppers (dried or fresh) and some spices (onion, cumin, tumeric), and be sure to cook that tortilla! - 12/29/09
