Emily's Stuffed Shells

Ingredients
16 Jumbo Pasta Shells2 cups nonfat Cottage Cheese1/2 cup Parmesan Cheese, grated1 cup shredded mozzarella cheese1 large egg1 tsp salt1 tsp black pepper1 T dried parsley1 8 oz can Tomato Sauce1 6 oz can Tomato Paste3 medium fresh tomatoes 2 cloves garlic2 T basil1 tsp ground oregano
Directions
Boil pasta shells to al dente stage (about 7 minutes).

Mix first group of ingredients and stuff shells.

Mix 2nd group of ingredients and pour over stuffed shells. Top with 1/2 cup shredded mozzarella cheese.

Bake at 400* for about 45 minutes.

Serves 8. (2 shells per serving)

    This was easy to prepare. I used a can of unsalted diced tomatoes instead of the three fresh and it worked out fine! I will surely be making this again! Thank Emily!! - 5/5/09
