Chicken Picadillo

Ingredients
2 Tablespoons of Extra Vigin Olive Oil2 Onions, Chopped2 Cups shredded cooked chicken or 2 breasts of chopped cooked chicken1 Granny smith apple, peeled,cored,and chopped1 Cup stewed tomatoes1/4 cup low-sodium chicken broth2 tablespoons of raisins2 Teaspoons of cider vinegar1 Teaspoon mined chipotles en adobo or can add more for more spice/smokey flavor1/4 teaspoon ground cinnamon
Directions
In a medium non-stick skillet over medium heat, heat the oil. Saute the onions until lightly browned, 8-10 minutes. (Also pan fry the apples a little as well tell they are just browning if you like a firm apple.)

Stir in the cooked chicken, apple,tomatoes,broth,raisins,vinegar,chipotles, and cinnamon; cook, stirring frequently, unitl the liquid is slightly reduced and the flavors are blended about 10 min.

Serves 4 1 cup servings

Great with Rice or Beans.
