Banana Oatmeal Chocolate Chip Cookie

1 1/2 c. oat flour (just grind up rolled oats into flour)3/4 c rolled oats1/2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 c sugar1/3 c chocolate chips1 tsp canola oil1/3 c low fat vanilla soy milk1/2 c banana puree (about 1 medium sized banana)1 tsp vanilla extract
Preheat oven to 375 degrees. Combine all dry ingredients in a bowl. Combine all wet ingredients in a seperate bowl. Mix the dry and wet ingredients together. Use a medium sized ice cream scoop or a large spoon to scoop batter onto cookie sheet covered with wax papaer. Bake for 12 minutes, rotating the pan 1/2 way through cooking, or bake until the edges of cookies are light brown. Makes 10 large cookies (or 20 smaller cookies)
