I'm guessing at ingredient amounts as I threw this salad together on the fly with no recipe. What I've entered is pretty close, though. It makes a giant salad bowl full... and I'm estimating it garners around 10 pretty big servings.Simply cook the quinoa (1 part quinoa to 2 parts water) in your rice cooker.Chop veggies to your likingToss together with lemon juice, olive oil & cracked black pepper to taste.

    I've been wanting to try quinoa for awhile, so today was the day. I whipped up a batch of Weezie's Quinoa early this morning, brought some to work for lunch, and IT IS WONDERFUL! So fresh tasting! So different! This one's a keeper. I did add some lightly sauteed sliced mushrooms to mine, and yum! - 5/28/09
