Mochi Muffins with Red Bean

Ingredients
3 cups sweet rice flour*3 eggs at room temperature1/4 cup butter melted1/2 tsp baking soda2 cups milk1 1/2 tsp salt1 cup sugar (1/2 cup Splenda Baking Blend)1 can sweetened red bean*Aluminum baking cups* can be found at Asian grocery stores
Directions
Mix all ingredients except red bean but add the sugar slowly as you mix. Use aluminum muffin cups, as the paper ones will stick to the muffin.

Fill the muffin tins about 2/3 full. Spoon in a heaping tsp full of red bean into the center of each muffin.

Bake at 375 for 20 minutes.
