Broccoli and Mushroom Quiche

Ingredients
3 cups cooked, chopped broccoli1/2 cup mushrooms, cooked1 3/4 cups egg substitute1 cup skim milk2.5 oz. cheddar cheese1.5 oz. feta cheese1 pillsbury pie crust (refrigerated)1/4 cup chopped scallionstbsp. fresh tarragon1/4 tsp saltFreshly ground pepper
Directions
In pie pan, blind bake the pie crust at 400 degrees for 8 min. Fill with cooked broccoli and mushrooms. Mix egg, milk, cheese, herbs, scallions, salt and pepper together. Pour egg mixture over top of vegetables. Bake at 400 degrees for 30-35 minutes. Serves 6 generous wedges.

*tip- Put a large roasting pan underneath to catch spill over and put small amount of water in bottom of the pan to help keep quiche crust from burning.
