Skillet Meatloaf

Ingredients
2 lb lean ground beef ( this recipe used 93% lean)3/4 c coarsely chopped celery1 small tomato1 sm green pepper, diced1 small onion, diced1 large garlic clove1/4 c water3/4 c raisins1/4 t pepper1 t ground cumin
Directions
In a food processor or bender finely chop or puree celery, tomato, green pepper, water, onion, garlic, pepper and cumin.

In a medium bowl, mix puree with ground beef and raisins.

Pack mixture into ungreased 10" skillet - preferably cast-iron.

Cover and cook over low heat on a stove. If need be, drain some of the extra fat during cooking. Cook for 55 minutes or until done.

Drain any excess fat. Place onto a serving plate. Cut into 8 pie-shaped pieces and serve.
