Ingredients
1 lb ground Buffalo (extra lean ground beef can be substituted if you can't find buffalo in your grocery store)2 15 oz cans recipe cut tomatoes 2 15 oz cans dark red kidney beans1 15 oz can tomato sauce1 yellow onion, chooped 1 garlic clove, crushedfollowing spices may be adjusted to tastechili powder 2tspcumin 1 tspsalt, dashpepper, dash
Directions
Place ground buffalo in a nonstick skillet and sprinkle with spices. Chop the meat up with a spatula so you will have small crumbles once it's cooked and brown it thoughly over medium heat.

While the meat is browning, chop the onion and crush the garlic, you may add these to the browning meat if you wish, but watch closely as the onion may burn.

Open the canned ingredients and add to a large stock pot, rinsing the cans into the pot (the rinses should give you the additional water mentioned in the recipe. It's OK to go over the 8 oz given in the recipe, that's just an approximation).
When the meat is browned transfer it to the stock pot, bring the ingredients to a boil and then lower the heat to a simmer for at least 20 minutes (the longer it cooks the better it gets).
