Kim's Veggie Slaw

Ingredients
7cups shredded red cabbage (about 1/2 med. head)1 cup chopped red bell pepper 1/2 cup chopped sweet onion. 2 c. broccoli shredded, (or pre bagged broccoli slaw)1 bunch radishes, sliced3 carrots, shredded (or chopped)1 c. grape tomatoes, halved1 medium cucumber, chopped ( I prefer seedless/hothouse)3 T balsamic vinegar3 T sweet rice wine (like Mirin) 3 teaspoons extra virgin olive oil 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/4 c. hulled, unsalted sunflower seeds (or pepitas)
Directions
Combine first 8 ingredients in a large bowl. Combine the vinegar, rice wine, oil, salt, and black pepper, stirring with a whisk. Drizzle vinegar mixture over cabbage mixture; toss gently to coat. Let salad stand 30 minutes before serving\
right before serving, toss with sunflower seeds.
