3 Cheese Lasagna Roll Ups

Ingredients
1 lb. lasagna noodles32 oz. pasta sauce30 oz..fat-free ricotta cheese1 lb. mozzarella cheese, shredded1/2 C. parmesan cheese, divided1/4 C. chopped parsley2 eggs, beaten
Directions
Preheat over to 350 degrees.

Cook lasagna noodles in boiling water until almost done. Rinse in cold water.

In a bowl, combine ricotta, mozzarella, 1/4 C. parmesan, eggs and parsley. Spoon some of the ricotta mixture (roughly 2 Tbs.) on each piece of lasagna noodle and roll up.

In 2 9x13-inch baking dishes , place 1/2 C. of sauce on the bottom. Place roll-ups, seam side down,on the sauce in the dish . Pour remaining spaghetti sauce atop roll-ups and then sprinklie with remaining parmesan cheese.

Cover the baking dish with aluminum foil and bake for 45 minutes. Makes 20 roll-ups.

Freezing directions: Do not defrost before baking. Bake from frozen state 2 1/2 hours at 350 degrees.
