Honey Dijon Chicken Salad

Ingredients
10 oz diced, roasted chicken (about 2 cups diced; for convenience you can use Louis Rich Oven Roasted Chicken Breast cuts)1/4 cup finely chopped green onion1 cup shredded carrot1 bag (12 oz) broccoli slaw (prepackaged mixture of shredded broccoli, carrots and red cabbage)1 cup red grapes, halved3/4 cup pineapple tidbits in juice, drained1/2 cup fat free honey Dijon bottled salad dressing1/4 cup sliced almonds, toasted
Directions
In a large bowl, combine all ingredients except dressing and almonds; stir gently to mix. Add dressing and toss gently to coat. Refrigerate 1 hour to allow flavors to blend. Toss, sprinkle with almonds and serve.

Makes 8 servings of one cup each.

This makes a lot, so unless you're planning on having this for lunch several days in a row, you might want to halve the recipe.

    I made my own honey dijon dressing, and it was great. I would definitely recommend halving the recipe. This recipe also stays well in the fridge. - 3/29/08
