Homemade Potato Salad for One

Ingredients
Large baked potato with skin, cubed1 tbsp sweet pickle relish1/4 c sweet onion, chopped1 tbsp celery, chopped1 tbsp hard boiled egg, chopped1/2 tsp celery seeds1 tbsp Light Miracle Whip1 tbsp yellow mustard
Directions
Mix all ingredients. Refrigerate at least 4 hours to let flavors blend. Note: use egg whites and fat free salad dressing to cut fat.
