Easy Vegetarian Potato Soup

Ingredients
1 (16 oz) bag frozen hash brown1 cup chopped onion1 (14 oz) can vegetable broth3 cups water (or less for thicker soup)1 (10 3/4 oz) can of each, undiluted: cream of celery soup and cream of potato soup2 cups milk1/4 cup shredded cheddar cheeseSalt & Pepper to taste
Directions
Combine frozen hash browns, onion, vegetable broth and water in Dutch oven and simmer 30 minutes. Stir in soups, milk, salt and pepper.
Heat throughly.

    I made this and was disappointed. I wouldn't make this again. To get a hearty, low-cal potato soup, I'd recommend taking the extra steps to use fresh ingredients and buttermilk in place of the canned soups. - 11/12/08

    This was awesome. I added corn and peas to mine, it tastes great. I cooked up a pot and seperated it for my lunches during the week. Much better for me then the frozen diet meals I was having! - 11/6/07

    This was fantastic! I kept the recipe exactly as is (used all 3 cups water) & added one can of cream of mushroom soup along with the cream of celery & cream of potato as well as one stock (= about a pound) of asparagus cut into 1 inch pieces. Yum!! Plenty for the whole family - 2/13/12
