Apple Cinnamon Raisin Cake

Ingredients
5 cup Granny Smith Apples, peeled, cored and chopped1 c sugar1 c raisins1/4 c walnuts chopped1/4 c canola oil2 tsp vanilla2 tsp ground cinnamon1 1/2 tsp baking soda3 tbsp egg beaters whites2 1/2 c sifted flour
Directions
Combine chopped apples, raisins, nuts and sugar. Set aside for about 30 minutes. It helps to moisten the cake.
Add oil, vanilla and egg to apple mixture. Mix well. Sift together flour, soda and cinnamon. Add to the apple mixture in stages. Do not over mix. The batter will be thick.
Turn batter into a greased 9x13x2 cake pan. Bake at 350F for about 35-40 (clean toothpick).
