Apple and Cinnamon Muffin

Ingredients
125g Plain Flour3 Tablespoons Golden caster Sugar3 Teaspoons Baking Powder2 Eggs, beaten100ml Sunflower Oil1 Large Green AppleSprinkle of cinnamon100g grounded bran flakes
Directions
1. Heat the oven to 200°C (400°F), Gas Mark 6
2.Mix the plain flour, sugar and baking powder in a large bowel, then make a hole in the centre.
3. In another bowel, mix the eggs, milk and oil together, then pour into the flour mixture. Stir until it is just mixed together, then stir grated apple, crushed bran flakes and cinnamon.
4. Divide the mixture among 12 muffin cases or similar. Bake in the oven for 20-35 minutes until firm. I find that 20 minutes is enough.

    I made this recipe today. It had no measurement for milk so I added about 3/4 cup. It was a bit too sloppy so I added about 1/3 cup of crushed bran flakes. I also used light brown sugar in place of caster sugar. They tasted very nice. - 4/28/09
