Large Pearl Tapioca pudding

Ingredients
4 C non fat milk, divided1 C pearl tapioca3/4 C sugar 1 t vanilla extract5 eggs, separated1 t salt
Directions
Soak the tapioca pearls overnight in 1 c milk. In a double boiler over simmering water, heat the milk soaked tapioca and the other 3 C milk ffor 1 hour, stirring occasionally. Add the sugar and and salt, stirring to combine.

Separate the eggs, and beat the egg whites until stiff. Stir some of the hot mixture gradually into the egg yolks, and then add this to the hot tapioca. Stir until well thickened. Fold in the egg whites, and chill. May serve warm- we like it like that.

Makes approx. 12 1/2 C servings.
