Crock pot vegan chow mein

Ingredients
1 lb. vegetarian chicken, chopped1 1/2 cups chopped celery1 1/2 cups chopped carrots6 scallions, chopped1 cup vegetable broth1/3 cup soy sauce1/4 tsp. red pepper flakes1/2 tsp. ginger1 can bean sprouts, drained8-oz. can sliced water chestnuts1/4 cup cornstarch1/3 cup water
Directions
1.) Combine all the ingredients, except the cornstarch and water, in the crock pot. Cover and cook on low for 6 to 8 hours.

2.) In a small bowl, mix the cornstarch and water until smooth. Stir into the slow cooker. Cook, leaving the lid askew to allow steam to escape, for 20 minutes, or until thickened.

3.) Serve with rice.

    This sounds like a tasty meal! @ wifeinlaw, you could use low sodium broth and soy sauce and rinse the bean sprouts and water chestnuts prior to adding them to the meal, should help lower the sodium content some. - 12/17/12

    I substituted real chicken for the "chicken soy" and it was very tasty. And the calorie count was really only around 250 per serving. - 10/14/07

    I am having a problem with the health factor on this dish... over 1,000 calories high fat and sodium that can kill you.. sounds like good food but think I'll pass.. - 6/24/07
