mediterannean barley salad

Ingredients
1 cup uncooked pearl barley,1/2 block extra firm tofu (8 oz)1 tsp garlic powder2 tsp Italian seasoning1/4 cup mushroom pieces3 tbsp President Fat Free Crumbled Feta12 grapes tomatoes1/2 peeled cucumber1/2 cup cider vinegar
Directions
Drop pearl barely in bowling water to simmer. In a medium bowl marinate tofu, mushrooms, tomatoes, feta, and cucumbers in 1/4 cup vinegar and seasonings.
When barley is tender rinse in cold water until cool. Mix barely with veggies and the rest (1/4 cup) vinegar. Allow to marinate at least 10 minutes and serve chilled.
