Coconut Flapjacks

115g brown sugar4 tbsp maple or golden syrup150g marg or butter250g rolled oats100g flour120g dessicated coconut (or any chopped nuts)
Melt the butter, brown sugar and maple syrup in a small saucepan over a gentle heat - do not allow to boil!
mix the oats, coconut and flour in a bowl and add the melted ingredients. Stir well and transfer into a buttered swiss roll tin.
pat the mixute down so it is evenly spread and bake for 20mins on a medium temperature of about 180c.
remove after 20 minutes and use a knife to mark out 16 pieces, once cooled cut using the marked lines.
You can replace to coconut with any chopped nuts, dried fruits or chocolate chips if you like. I love coconut ones but another favourite is toasted hazelnut and cranberry!
