Mild Yellow Curry Sauce

Ingredients
3 Tbsp butter1/2 onion, minced2 tsp. curry powder3 Tbsp. flour3/4 tsp. salt1/4 tsp. ground ginger1 C vegetable broth or Water1 C unsweetened milk
Directions
Melt butter over low heat in a heavy saucepan. Saute onion and curry in melted margarine. Blend in flour and seasonings. Cook over low heat until mixture is smooth and bubbly. Remove from heat. Stir in broth and milk. Bring to a boil, stirring constantly. Take off heat and put into a serving tourine.


Pour sauce over rice, vegetables, meat, fruit, etc for a rice based curry meal.

    Really tasty curry sauce. I amped it up a bit by using yogurt in place of broth, and adding a little more curry than called for. It was a little thick, so I just added about a half cup of water and that made it perfect. I served it over chicken and veggies with homemade naan. Delicious! - 9/28/13
