Carrot & Ginger Soup

Ingredients
2 lbs peeled, diced carrots1.5 cups onion, diced1.5 cups celery, diced2 tsp fresh ginger, grated2 tbsp Olive oil6 cups chicken broth
Directions
Sautee carrots, onion, and celery in olive oil till tender. Add ginger sautee for 2 min. Add chicken broth and cook till vegetables are over done. Puree soup in blender. Serve hot or cold.
