Vegetarian Bean Hot Pot

Ingredients
2 tbsps vegetable oil 2 onions, sliced 2 celery stalks, diced 1 carrot, thinly sliced 1 green capsicum, chopped 2 tsps chopped fresh garlic ½ - 1 tsp dried chilli powder 420g can Baked Beans in Tomato Sauce 400g can chopped tomatoes ½ - 1 cup vegetable stock (or water) 150g button mushrooms, sliced 150g green beans, sliced ¼ cup tomato paste ¼ cup chopped fresh parsley or rosemary
Directions
1. Heat oil in a large saucepan, add the onions and cook for 3-4 minutes, or until tender.
2. Add the celery, carrot, capsicum, garlic and chilli, cook for a further 3-4 minutes.
3. Add the remaining ingredients and bring to the boil. Reduce heat, cover and simmer 15 minutes. Stir occasionally. Serve over a bed of couscous or creamy mashed potato.
