L.R. Chocolate cheesecake

2 cups oreo cookie crumbs (I put mine in the food processor) (about 15 cookies)1 T. butter, melted6 cups fat-free ricotta, (processed in food processor until smooth)1 cup sugar1 tsp. vanilla1 cup fat-free sour cream1/2 cup unsweetened cocoa powder4 eggs
Mix cookie cumbs with butter. Press into the bottom of a 9"x13" baking pan. In a large mixer bowl, beat the ricotta with the sugar, vanilla, sour cream and cocoa powder until smooth and fluffy. On low speed beat in the eggs, one at a time, mixing well on low. Pour onto crust. Bake at 325 for 40 minutes exactly. Cool completely on a wire rack. Chill overnight in a refrigerator. Makes 18 servings.
