Brown Rice with Saffron and Mushrooms

2 small onions, chopped2 tbs garlic, chopped2 tbs dairy free buttery spread1 pinch saffron1 tsp seasoning salt1/4 tsp black pepper12 dried mushrooms, chopped2 cups brown rice5 cups water
In a pot with a tight fitting lid begin to saute the onions, garlic, seasoning salt, pepper and saffron in the dairy free buttery spread.
Once the onions begin to soften add in the 5 cups of water and the chopped mushrooms.
Bring to a boil.
Add the brown rice.
Stir.
Reduce heat to simmer, cover and cook stirring occasionally for 4 minutes or until the rice is tender.
