Good Morning Omelet

Ingredients
1 cup Egg beater1 oz. Cheddar1 tbsp green pepper1 tbsp onion1 tbsp tomato10 spinach leaf2 large mushroom chopped1 tsp olive oil
Directions
Add olive oil to 8" skillet over medium low heat. Add mushroom, green pepper, and onion. Cook until onion are transparent. Add tomato for about 1/2 minute spread veggie mixture evenly in the pan before adding egg beater. Cook omelet thoroughly by lifting the eggs a side at a time draining the uncooked portion into the bottom of the pan. Add fresh spinach one side of the omelet 1/2 way through. Add cheese to the spinach side and fold in two. Remove from the pan when cheese is melted.
