California Roll Salad

Ingredients
1/2 c. Brown, long grain rice1 English cucumber, cut into 1/4" dice3 Heads of ramaine lettuce hearts, shredded1 Avacados, peeled, pitted, and cubed1 lb. Cooked, peeled shrimp, cut into 1/4" dice1/2 c. crumbled nori seaweed2 t. wasabi powder, or to taste1 T. Lite Mayonaise1 T. Soy sauce1/4 c. white wine vinegar1 T. Sugar1 t. Sesame Oil
Directions
Pour water and rice in a small saucepan. Bring to a boil. Reduce heat to low and cover. Allow to cook about 30 minutes or until water is absorbed and rice is tender. Set aside and allow to cool.

In a large bowl toss together lettuce, cooled rice, cucumber, avacados, shrimp, and seaweed.

In a small bowl whisk together the wasabi powder, mayonnaise, soy sauce, vinegar, sugar and sesame oil.

Pour dressing over salad and toss. Serve cold or at room temperature.
