1 med. onion, chopped1 cup cider vinegarBrown sugar, 5 tsp packedSalt, 1/2 tspPepper, 1/4 tspDry mustard, 1/2 tsp1 cup red pepper, chopped1 cup green bell pepper, choppedJuice of 1/2 lemon or 1 oz1/2 tsp crushed red pepper flakes3 Boneless Skinless Chicken Breast
Preheat Oven to 350 degrees.Spray baking dish with non stick spray.In small saucepan, combine onion, peppers,vinegar, brown sugar, juice, salt, dry mustard, red pepper flakes, and black pepper; stirring constantly, bring liquid to a boil.Reduce heat to low; simmer, stirring occasionally for 20 minutes until flavors are blended.Cook chicken turning as needed and basting with some of the onion mixture, 20 mins until browned and juice run clear with pierced with fork.Transfer chicken to serving platter: top with remaining onion mixture.
