Ingredients
*HyVee Egg Substitute, 0.5 cup (remove)Mushrooms, fresh, 0.5 cup pieces (remove)Yellow Peppers (bell peppers), .25 pepper, large (3-3/4" long, 3" dia) (remove)Spinach, fresh, .5 cup (remove)*Laughing Cow Light Creamy Swiss Original Cheese (Serving = 1 wedge), 1 serving (remove)
Directions
saute veggies with pam oil spray, pour the egg substitute over the veggies. when done, break the cheese into pieces and put on half and fold the other half over.

    Really good, the cheese is a little awkward, since it doesn't melt quite right, but I also just broke it up with my hands. I imagine if I cut into smaller pieces, it'll spread better. I added freshly cut parmesan curls, and some salt and pepper, and it was awesome! Will make again for sure! - 1/30/10
