2 slices whole grain, high-fiber bread (like Milton's)1 thin slice of light swiss cheese1 layer of fresh organic baby spinach leaves3 rings of organic red bell peppers3 rings of sliced red onion2 thick slices of organic tomatoes2 dill pickle "sandwich slices"1 handful of alfalfa sproutsOptional: 1 tsp. stone-ground mustard; handful of shredded carrots; sliced cucumbers.
Directions
Slice veggies and assemble sandwich.

    I eat a similar sandwich almost daily-love veggie sandwiches! I use a lower calorie wheat bread and add 1-2 tbsp spicy wholly guacamole for about the same calories. - 1/16/12
