Chicken breasts (skinless), coconut milk, canned pineapple chunks (drained), curry paste, flour, lemon grass powder, onion, garlic, water, fresh kaffir lime leaves
Cut chicken breasts into bite size, mix with flour, stir fry for 1 min in hot canola oil, set aside.
Fry diced onion and garlic in 2 tbsp canola oil, add curry paste, mix, add fried chicken breast, mix, add half can coconut milk and water, bring to boil, add the leftover coconut milk. Add lemon grass powder and kaffir lime leaves. Stir, and simmer for 30 min.
