Beef Enchiladas

1 lb 93% lean ground beef20 oz enchilada sauce1 large onion, chopped2 cups sliced mushrooms1 small can sliced black olives1 cup fat free cheddar cheese6 96% fat free burrito size flour tortillas
Brown ground beef and onion together.
Add 1/2 cup cheese, and stir until melted. Remove from heat.
Stir in mushrooms, olives and about 1/4 cup enchilada sauce.
Place another 1/4 to 1/2 cup enchilada sauce on the bottom of a 9x12" pan, enough to coat.
Wrap beef mixture into tortillas and place in pan.
Top with remaining enchilada sauce, and sprinkle with remaining cheese.
Bake at 350F for 30 minutes, or until hot and bubbly.
Makes 6 servings, one enchilada each.
